Trim the pork tenderloins and cut into bite-sized pieces. Season with salt and black pepper. Quarter the mushrooms, slice the carrots, chop the onions and sweet peppers, and mince the garlic.
Heat olive oil in a large pot over high heat. Sauté the mushrooms until golden brown and their moisture has evaporated. Remove and set aside.
Add more olive oil and sear the pork in batches until browned on the outside. Transfer to a bowl with any juices. The pork will finish cooking later.
Cook the diced bacon over medium heat until lightly browned. Add the onions, reduce the heat to medium-low, and cook gently until soft and golden.
Add the garlic and cook for 1 minute. Stir in the carrots and sweet peppers and cook for 3–4 minutes. Return the mushrooms to the pot.
Add the tomato paste, sweet paprika and dried thyme. Stir and cook for 1–2 minutes without letting the spices burn.
Add 2 cans of chopped tomatoes and approximately 400 ml water. Stir, scraping the bottom of the pot, and simmer for 2–3 minutes.
Pour in the cream, stir well and simmer gently over low heat for approximately 10 minutes.
Return the pork and its juices to the pot. Add the cocktail sausages and simmer gently for approximately 10 minutes, until the pork is cooked through. Add sugar gradually to balance the acidity, then season with salt and pepper.
Serve the creamy pork tenderloin stew over fluffy rice. Enjoy one portion straight away and save the remaining stew for two more easy family dinners. Follow the freezing and reheating instructions above for safe storage.
